If you’re watching your waistline but still crave an indulgent cookie that will transport you to the summer in grandma’s house with every single bite, we’ve got you covered. This is an incredible alternative to the sugar-laden, high-fat cookies that you’re used to eating. Super chewy and slightly crispy on the outside, these cookies not only taste great but pack a punch. Pair it with your favourite plant milk and you are sorted.
Ingredients:
- 1 cup oat flour
- 1/2 cup coconut sugar
- 1/2 cup Soyvita Sweetened Regular Malt or Sweetened Vanilla
- 1/2 tsp baking powder and 1/2 tsp salt
- 3 tbsp coconut oil
- 4 tbsp peanut butter
- 1 and 1/2 tbsp of your favourite plant based milk
- 1 tsp vanilla extract
- 2 tbsp cocoa powder
- 1/4 cup chocolate chips
Method:
Preheat your oven to 350F and line a baking sheet with parchment paper. In a bowl, mix together the oat flour, coconut sugar, Soyvita, baking powder, and salt.
Add the coconut oil, peanut butter, plant-based milk and vanilla to the mixture. Mix well together. Now add the cocoa powder and a little more plant-based milk.
Stir until well combined. Stir in the chocolate chip cookies and add a little more milk if the mixture seems too dry.
Roll them into tiny balls and place them on the parchment paper. Flatten them and smoothen the edges.
Bake it for about 15 minutes or until the crust turns golden brown. Let them cool and dig in.
